This was supposed to be a Star Wars Fanon 3 - Many Bothans, but I cancalled it and instead I created another thread. Today I'll explain you difference between Jedi Consular and Jedi Guardian.
First of, what are these paths?
These are paths of Jedi and as we know Jedi are guardians of peace and justice, however there are different options: Jedi Consular can settle and negotiate peacefully, but Jedi Guardians are fighting for peace and justice.

Jedi Guardian - this is path of Jedi who spents more time on combat training and are fighting for freedom at some sort, they have lightsaber with blue crystal installed. They very often fight for something to bring balance and peace.
Jedi Consulars are very different from Jedi Guardians
Jedi Consular - this is path of Jedi who spents less time on combat training and more time mastering their force powers and etc. They often negotiate and settle problems peacefully unlike Jedi Guardians. They have lightsaber with green crystal and... well there's nothing much to tell about them as they spent less time on combat training and more focus in the Force.

Both classes, however, can have two lightsabers or double-bladed lightsabers as was proven during Mandalorian Wars most jedi had double-bladed lightsabers.
In Knights of the Old Republic Jedi Guardian can master force jump to attack enemy while they don't expect that, Darth Malak, a main protagonist also has ability to force jump and so that's why he's Jedi Guardian in a game. No other class in a game has that ability.
And an extra path which is non-canon.
A Jedi Sentinel - this path is not much different from Jedi Guardians. They have yellow color of lightsaber and more spent time on skills and ability training, so they aren't much different from Jedi Guardians as you can see.
